Have you heard about Cochineal? This is a tiny, cactus-dwelling insect, more like a beetle, that produces a vibrant red pigment: A (E 124). It was harvested for thousands of years by Indigenous peoples to produce a dye for their own textiles. However this technique can be found in several places within Mexico nowadays.
Candies, ice cream, beverages, yogurt, lipstick and eye shadow can all be colored with cochineal.
